In my lively home, where I juggle the roles of both mom and dad most days for my four wonderful daughters, dinnertime is a cherished time of day. Finding meals that are not only speedy to make but also a hit with my girls has always been my mission. That’s how our beloved Quick and Zesty Egg Roll Bowl came to life.

One day, I reminisced about our favorite takeout egg rolls, and the desire to bring those flavors into our home led me to create a homemade version. After a bit of experimentation, I crafted a simplified, homemade delight that we soon came to adore.

  • 16 ounces of pre-shredded cabbage or coleslaw mix
  • 1/4 cup of low-sodium soy sauce
  • 1 teaspoon ground ginger
  • 2 teaspoons of sriracha sauce or smoked paprika
  • 1 large egg
  • 1 tablespoon of aromatic sesame oil
  • 2 tablespoons of freshly sliced green onions
  • 2 tablespoons of sesame seeds
