Ingredients:

  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 whole-grain or spinach wraps
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1 avocado, sliced
  • 1/2 red onion, thinly sliced
  • 1 cup mixed greens (spinach, arugula, or your choice)
  • Greek yogurt or tzatziki sauce for dressing

Instructions:

  1. Preheat the grill or grill pan over medium-high heat.
  2. In a bowl, mix olive oil, smoked paprika, cumin, garlic powder, salt, and black pepper to create a marinade.
  3. Place the chicken breasts in a resealable plastic bag and pour half of the marinade over them. Seal the bag and massage the marinade into the chicken. Let it marinate for at least 15 minutes.
  4. Grill the chicken breasts for about 6-8 minutes per side or until they reach an internal temperature of 165°F (74°C). Remove from the grill and let them rest for a few minutes before slicing them into thin strips.
  5. Warm the wraps according to the package instructions.
  6. Assemble the wraps: Lay out each wrap and place a handful of mixed greens in the center. Add slices of grilled chicken, cherry tomatoes, cucumber, avocado, and red onion.
  7. Drizzle the remaining marinade or a dollop of Greek yogurt or tzatziki sauce over the ingredients.
  8. Fold the sides of the wrap and then roll it up tightly.
  9. Secure the wrap with toothpicks if needed and cut in half diagonally.
